The long view at farming conferences

It is officially farming conference season; that time of year when farmers come together to forget about the struggles of the previous year and get excited about the possibilities for next season. So few of us Americans are farmers anymore that throughout most of the year when farmers are focused on their own corner of the world, communication is almost always with people outside of the agricultural community. Whether dealing with farm customers, phone support from the computer manufacturer, or a surly checkout person at the grocery store, there are few people to commiserate with that really understand the highs and lows of working a farm.

It is wonderful to watch the smiling faces of farmers at these conferences when they talk to friends and vendors. They can tell the stories of the year knowing, for once, that they do not have to explain all that background ("Yes, I am actually a farmer" "Well, food actually comes from a farm somewhere not the grocery store" "No really, I'm a farmer").

I am not working on a farm any more as these web projects seem to take enough of my time (see these soft hands?), but going to a conference like Acres USA is still a refreshing experience. It is gratifying to look prospective Small Farm Central members in the eye and tell them about the service and show them a demo. This product is for farmers who just want their web marketing to work and it is gratifying to remember that this is a big help in a farmer's life in finances, time-management, and professionalism. In whatever we do in life, it is important to look up and see the broader picture of the daily work. Going to a farming conference rejuvenates my drive for Small Farm Central just as much as farmers are renewed when they know that they are among equals.

A hearty welcome to the new faces who signed up during the conference and hopefully many more farmers I talked to will join over the next few months. Thanks also to Chris Deatrick who graciously hosted me while I was in Louisville. He corrected my pronunciation of the city's name and took me on a great tour of the city.

Young farmer ponders economic sustainability

"The best way to stay grounded, it seems, is to develop a vision based on some core values and principles that you believe in, and to return to this vision every time you feel discouraged. So I've spent the last month focusing on a foundation which will ultimately become the backbone of my business plan. My main guide was a publication titled "Building a Sustainable Business: A Guide to Developing a Business Plan for Farms and Rural Businesses" developed by the Minnesota Institute for Sustainable Agriculture.

The first thing I did was identify values, or "standards, beliefs or qualities that you consider worth upholding or pursuing." In other words, they define what it means to me to be successful in farming. They're broken down into four categories: personal, economic, environmental, and community. What resulted was a list that pretty much defined why I've chosen farming as a lifelong vocation. In time, I plan on focusing on these values individually, through future newsletters or articles."

"During my first two years of farming in New York, I was fortunate enough to have a mentor who was a lifelong farmer and took me under his wing. I often think to this day that if it hadn't been for his influence, I might've wasted years in the wealthy hobby farming community, where having the rarest breed or the most unique tomatoes outweighs turning a profit. It's great when--of all the things wealthy people can do with their money--they choose to preserve farmland and endangered breeds or varieties; but from what I've seen, such operations tend to have unrealistic expectations that always fall on the staff, and the turnover is high, despite good pay.

Instead, I learned early on that there are profits to be made from farming, if one chooses to be creative and ambitious enough. I also realized that if I could make a living from farming in a way that's both ecologically and financially sustainable, I'd feel like an accomplished human being. Once that was settled, I knew what I needed to learn: how to run a farm as a business. And I knew I wasn't getting it in New York. But I'd added another value to my list: financial sustainability."

"In looking at the big picture, I acknowledge that the only way an alternative food system is ever going to become established is if every generation builds upon the work of the one before it. To reinvent the wheel unnecessarily is not only counter-productive, but it's also a waste of time. I've learned to value continuity and collaboration more than ever.

With these realizations in mind, I'm now more open to the possibility of striking up a partnership with an existing farmer and working out some way that I can invest in their farm, rather than build one from the ground up. Whether it'll actually pan out that way, who knows? If there's anything I've learned in New Mexico, it's to hang on to your values and just wait and see...!"

A few beets are all that's left of my most recent CSA bag, but for those who are just ahead of the last frost, here's a great fall-into-winter recipe for the final cruciferous bounty of the season.

Cauliflower, Chard and Leek Gratin
1 medium head of cauliflower, florets only
1 bunch of chard, cleaned, stem removed and chopped
1 leek, white and light green parts only, washed well and chopped
1/4 cup chopped shallot
1 tbs. olive oil
2 tbs. butter
2 tbs. flour
1/4 cup cream
1-3/4 cup 2 percent milk
1/4 tsp. nutmeg
1 cup grated Grana Padano cheese
1/2 cup grated Parmesan
salt and pepper to taste

Steam the cauliflower until tender crisp, about 10 minutes. Set aside. Heat the olive oil in a large pan, saute the leek and shallot for a few minutes until just starting to turn golden. Add the chard and saute until just wilted. Mix with the cauliflower in a roasting pan.

Make the bechamel. Start by melting the butter in a sauce pan. Add the flour and whisk until it begins to turn golden and smells "nutty" and no longer like raw flour. Add the cream and milk slowly, whisking as you go to keep it smooth. Add the nutmeg. Whisk over low heat until it thickens. Add the Grana Padano cheese and whisk until melted and smooth. Season with salt and pepper to taste. Pour the sauce evenly over the cauliflower mixture. Sprinkle with the Parmesan cheese.

Bake at 350 degrees for about 15-20 minutes until the top turns golden and it is heated through. You can also do this with broccoli.

Nine practical solutions for the consumption of home canned food

There were hot August and September evenings in the kitchen over a hot stove top ‘preserving the harvest’ from the farmer’s market, CSA, and home garden. The gardens are now frozen and farmer’s markets are closed, so I am starting to look at the cupboard (in my case the cupboard is a collection of boxes pushed to a remote corner of the kitchen) with thoughts of how and when to pop open those time capsules - bundles of joy and summer.

 

The food in those jars is no longer simple sustenance. There is a story in each jar: the place the food was bought or grown, the family or friends who helped, and the weather on that day. It is a splinter of life intersecting with produce in a deeply personal way that food from the grocery store never can never match.

 

This home food preservation isn’t logical; it doesn’t fit into any mainstream economic theory. I spent seven hours one evening on seven quarts of canned tomato sauce. This was not hard labor throughout the process, but I was mindful of the canning throughout that long summer evening. At any reasonable rate of return on my labor, they were wasted hours that could have been spent creating value in other pursuits. What happened to that core tenant of capitalism: specialization?

 

This irrationality is one of the reasons that we are still canning at home and more people try it each year. It is seen as old-fashioned, anachronistic. It doesn’t make sense – it is something that you can’t discuss in mixed company or at the office unless you are willing to brave a long explanations and puzzled stares.

 

“Let me get this straight: you made your own pickles? Out of cucumbers?”

 

But as you know it is a testament to experimental cooking, the bounty of summer, and your own resourcefulness. It is anti-economic; not necessarily against modern society, but a way of running parallel. It is quiet, messy, and the opposite of fast food. 

 

Now theory ends – you’ve put in the time over your boiling-water canner and it is time to collect on debts and eat that home canned food. Here are some suggestions on how to eat it all; just don’t be shy. That food is for eatin’, not just for lookin’.

 

  1. Alone
    Hoard the hard-earned food for just yourself. Tell your friends and family that they should have accepted the invitation to your canning party if they wanted to get in on the end product.
  2. “Meet the foodies”
    Invite neighbors and coworkers over to an “informal” winter dinner. As they walk in the door hand each guest a menu which lists each dish along with the date the food was preserved, from what farm the produce was purchased, and to really elicit the desired effect attach all recipes so your guests know exactly how long you slaved over the stove for each dish.
  3. With closed eyes
    Eat peach butter straight from the jar with a spoon with closed eyes. Imagine the steps from bud growth in the spring to that moment. Be surprised to see snow falling outside when you open your eyes.
  4. Reverently
    Leave each jar on the counter for a few days before a planned usage. Delight in how the winter sun glints on your little piece of summer, then cook and eat the meal with a touch of sadness.
  5. Gift-it
    Preserved food is a perfect antidote to the January Blues, so give the gift of summer this Christmas.
  6. In your sleep
    Who here can say they haven’t ever woken up with an empty jar of bread and butter pickles laying on the bed next to them?
  7. With friends
    A friend of mine loves the pickled okra I have made the last few years, so I always save a few bottles for his enjoyment.
  8. Feverishly
    If you find applesauce running down your shirt or drinking the pickle juice at the end of the container, you may be suffering from eating style #8.
  9. Over-planned
    In August, plan out your meals for the whole winter down to the last jar of tomato sauce. Pick a weeknight as the night of preservation and choose a recipe from the list for each week December to March.

5 farm blog ideas - part 2

Wake up a little early this morning and write your farm blog.

This is the second installment of "5 farm blog ideas" -- click here to see part 1.

  1. "A day at the market": Describe in detail -- from waking up before dawn to unpacking the truck after dark -- a day in the life of the farmer's market. The whole cycle is not something most customers appreciate because they see you for a few minutes in the mid-afternoon and do not think about the long hours that it takes. On the days you really need some sympathy, this is a good blog entry to print out and stick in every customer's bag as they leave your stand.
  2. Cold weather farming: What do you do at the farm to get crops to customers in the cold season? Frost protections, specialized crops, and over-wintering are all interesting topics for non-farmers.
  3. Cleaning up the farm: What does it take to get the farm ready for winter? The tiny farm blog did a great job of this by describing how he uses the bucket of a front-end loader to clean rows. He finds it "too easy," akin to cheating, but it is a great example of how creativity with farm implements is often utilized. This inventiveness goes on at every farm, but it is not something that the average eater knows about.
  4. Focus on the crop: Whether you produce vegetables, meats, or other products you have probably gained knowledge on the crops you grow over the years. The Ladybug Letter did this recently with pumpkins. Most of us do not have Andy's virtuosity, he discusses nursery rhymes, special varieties ("Cucurbita maxima"), Cinderella, and Nixon, but just write down your knowledge of a particular crop and you have a blog article that customers will love.
  5. Conferences: As the work slows down on the farm, the farming conference season kicks into high gear. One way to remember what you learned at the conference is to write about it in terms that your customers can understand. Explaining the ideas in simple terms will help you challenge some of your assumptions and your customers will become more connected to the farm. That sounds like a win-win.


Tomorrow is Thanksgiving.. Among the many things I am thankful for in my life, I am thankful for the friends that I have made across the country while providing the Small Farm Central service. I am also thankful for the education and experiences that led to this project; it provides me with a lot of pleasure.

As we approach the end of 2007, I see farms and farm-related organizations getting excited about the possible applications web technology. It really is a perfect fit: the Internet connects geographically separated organizations and people at a negligible cost. Many small, direct-marketing farms are rural, but market to the urban customer. As our lives, especially urban lives, move further online it is important to find creative solutions to connect farms to eaters.

Perhaps the largest obstacle to this goal is the cost, expertise, and will required to develop complex web systems that solve these problems. I believe that Small Farm Central is one small part of this puzzle. Providing a professional web-presence and e-commerce at low-cost is important because most farmers do not have the time to learn the technology and just want it to work.

There are also many other parts necessary to solve these problems -- listing services like LocalHarvest, coops that use technology to augment their business (such as Penn's Corner in the future or as Lancaster Farm Fresh is doing now), and systems that have not been imagined yet. A few weeks ago, I was talking to a regional sustainable agriculture organization that wants to deeply connect farmers and customers in the region through a comprehensive website. He has some great ideas and I am excited to see that project take shape.

Given creativity, will, and technical skill we can create tools as a community that will keep environmentally sustainable farms economically sound.

Weekend Recipe - Vanilla-Sweet Potato Pie with Pecan-Brown Sugar Crust

For Crust:
1 cup all-purpose flour
2/3 cup pecans
3 tbs. Brown sugar
1 stick butter
1/3 cup cake flour (not self-rising)
1/2 tsp. Salt
4-5 tbs. Ice water

For Filling:
1 and 3/4 lbs. Sweet potatoes (2 large, red-skinned with dark orange flesh)
1 cup whipping cream
3 eggs
1 cup brown sugar
1/2 tsp. Ceylon cinnamon (Ceylon has a softer, fruitier flavor without harsh bite)
1/4 tsp fresh grated nutmeg
1/2 vanilla bean, split lengthwise and seeds scraped out with back of knife
1/4 tsp. Salt
Plus:
1 egg white beaten for crust

For the crust, put the pecans in food processor and pulse to chop fine. Add the flours, salt and sugar to the food processor next and pulse to combine. Add cold butter one tablespoon at a time and pulse a few times until mixture resembles coarse meal. Add ice water one tablespoon at a time and pulse just until dough starts to come together. You may not need all the ice water. Less water is best. Try not to overmix. Gather dough into a ball and flatten into a flat disk. Cover in plastic wrap and chill for at least one hour and up to a day.

Roll the dough out between sheets of plastic wrap to about a 14-inch round. Peel off top layer of wrap and then invert dough into pie dish, remove wrap. Trim the edges to 3/4 inch overhang and crimp. Cover crust with plastic wrap. Place dish with crust in the refrigerator to chill while you make filling.

Place rack in bottom third of the oven. Preheat oven to 400°F.

Peel sweet potatoes and cut into 1-inch cubes. Steam potatoes for about 20-30 minutes until fork tender. Allow to cool a bit and mash with potato masher until smooth. (You can also use a food processor and pulse a few times). Measure one and one-half cups of puree for the pie, placing this into the food processor. Add brown sugar and pulse to combine. Add three eggs pulsing to combine, drizzle in cream while blade is running to mix in. Add salt, cinnamon, nutmeg and the seeds from the half of vanilla bean, reserving the pod for other use. Pulse to combine well.

Remove crust from fridge, remove wrap and brush with beaten egg white. Add filling. Cover crust edges with foil to prevent over-browning for the first 30 minutes of baking. Bake until the center is set and the edges puff up, about 40-45 minutes. Remove the foil from the crust halfway through baking so the crust will brown.

Successful farm email lists - Part 1 - Collecting email addresses

This part 1 of the Successful Farm Email Lists series. A few easy techniques, followed consistently, will yield surpringly good results in growing your mailing list.A few easy techniques, followed consistently, will yield surpringly good results in growing your mailing list.

Collecting emails from your customers is an easy task and a large email list can build up very quickly if you use some simple techniques faithfully. If you go to farmer's markets or otherwise interact with the public, your email sign-up list should be ready everyday. Each time you make a sale to a new customer be sure to ask them if they want to sign up for your mailing list and have an elevator pitch ready such as, "We just send an email out every two weeks with the newest products available, photos, and links to our website. You can unsubscribe at any time and it's a great way to learn about the products we have after the farmer's market season is over."

The sign-up for can be very simple -- I just made one up last week for a conference using an Excel spreadsheet and asked for the following information:

  • Name
  • Email address
  • Demo (y/n)
  • Mailing list (y/n)
  • Signature


Although collecting the customer's name is not required, it is nice to collect that information to help your handwriting analysis as you decipher the email address. Most of the time people write their information down in a hurried way and are not thinking to write legibly so you can type the address into your computer, so the more information you collect the better off you are.

I wrote in large text at the bottom of each page: "We will not share your email address with anyone for any reason and you can unsubscribe at any time." Even though you know you are trustworthy and will not share emails with any other organization, many customers are wary of giving away their email addresses so remind them over and over that they can unsubscribe and that you only use the information for your farm.

To really increase the size of your mailing list and customer satisfaction, give some extra value to people that opt in to your list. Have extra flowers of one variety because you accidentally grew 500 row feet instead of 50? Give each customer a flower when they sign up for the mailing list to say thanks! They will appreciate the flower and you will appreciate the extra email address.

Another good place to collect email addresses is on your website; have a text box and submit button that adds any email entered to your mailing list. This usually takes some advanced skill or software (such as the Small Farm Central service and other options that I will discuss in Part 2) because you are going beyond the capabilities of normal HTML and getting into more advanced programming. A bare bones approach could just encourage visitors to send a message with "SUBSCRIBE" in the subject line to your your email address. This technique can turn a casual web surfer coming to you from LocalHarvest into a regular paying customer.

Legal issues

Unsolicited emails are a big problem on the Internet; Congress has tackled with issue with the CAN-SPAM Act of 2003 (Controlling the Assault of Non-Solicited Pornography and Marketing Act). It all boils down to this fact: you must give the recipients of the email list a mechanism to discontinue all emails from your farm.

This can be as simple as replying to you with "UNSUBSCRIBE" in the subject line or as complex as the way Small Farm Central and other mailing list software works. When someone requests removal from a farm's mailing list, we first check against the database to make sure the email exists. If  it does, we generate a unique link and send it to the address provided. Then the recipient simply clicks the link sent in the email and they are removed. This ensures that the person requesting removal from the list is the owner of the address.

Since your farm mailing list will likely not get huge you probably don't need to read all the laws related to spam, but it is important to follow the basic rules. Penalties can include being labeled a spammer on various spam databases (this means your emails will go to "Junk" instead of the Inbox), having your email account stripped by your service provider, fines, or, most importantly, the loss of customer trust.

More next week

Next week I will cover how to get those emails from you to your customer. There is a better way than simply separating each email address with a comma in your normal email client. This will become especially important as you use the techniques described above and your list grows from 50-odd email addresses to many hundreds.
